Commonly found in the rivers of Russia, Danube and Caspian Sea. It takes approximately 10 years to mature.
The name Oscietra corresponds to the species Acipenser gueldenstaedtii, which is much smaller than Beluga sturgeon (Huso huso), and has a firmer texture.
Colour: Dark brown to lighter brown.
Flavour: Smooth with a lingering buttery finish.
